Quinoa Tabouleh & Föld Vital Hemp

This tabouleh is the perfect choice for a light, fresh and nutritious meal! 🌱 Made with quinoa and Föld Vital Hemp, it is ideal for hot days, whether as a side dish or main dish. And best of all? You can take it with you to the beach or for an outdoor picnic.

Ingredients:

100 g quinoa
250 ml of water
150 g cherry tomatoes
100 g cucumber
1/4 red onion
20 g fresh parsley
20 g fresh mint
30 g of Föld Vital Hemp
Juice of 1 lemon
2 tablespoons extra virgin olive oil
Salt and ground black pepper to taste

Preparation:

1. If possible, soak the quinoa in plenty of water for 6 to 8 hours.

2. Wash the quinoa well under running water. Place it in a pan with the water and a pinch of salt. Bring to the boil over medium-high heat. Reduce the heat, cover and cook for about 15 minutes, or until the quinoa is cooked and all the water has been absorbed. Remove from the heat and let cool.

3. While the quinoa is cooking, prepare the vegetables. Chop the tomato, cucumber, red onion, parsley and mint and place everything in a large bowl.

4. When the quinoa is ready and cooled, add it to the bowl with the chopped vegetables.

5. Add Föld Vital Hemp to the tabouleh and mix well.

6. Season the tabouleh with lemon juice, extra virgin olive oil, salt and ground black pepper to taste. Mix again to combine all the flavors.

7. Taste and adjust seasoning as needed.

8. If possible, store in the refrigerator for a few hours before serving so that the flavors can develop and blend.
